Having just returned from a dream holiday in Mexico, I was inspired to create a smoothie filled with the fresh, staple ingredients that are in such abundance there. Mexicans literally team lime with everything – just wonderful!
Pineapple is best eaten when ripe and juicy – its sweetness contrasts beautifully against the sourness of the lime. Pineapple also contains powerful anti-inflammatory digestive compounds that break down proteins – boosting overall digestion. Finally, it is high in natural sugars – although its enzymes combined with insoluble fibre help you maintain a flat belly and enjoy less bloating.
Blend all ingredients until smooth.
1 Cup Frozen Pineapple
1/2 Cup Coriander
1/2 Cup Mint
1 Lime, Juiced
1/2 Fresh Red Chilli (optional)
1 1/2 Cups Coconut Water
1 Tbsp. Maple Syrup
