Bircher Muesli was the stuff of my teenage years – I plumped for it over and above standard porridge or cereals every time. Today, it appears to go by the name of ‘Overnight Oats’ – which is a kind-of ‘does what it says on the tin’ type of name!
The wonderful thing about this recipe is that as long as you get the liquid to dry ratios correct, you can substitute the juice for a nut milk, add different fruits and experiment on what works for you.
Oats are loaded with dietary fibre and boast a number of health benefits, including the lowering of bad cholesterol levels. As Oats are gluten free, they’re also perfect for those who follow a gluten free diet.
Combine all ingredients together in a bowl, mix, cover and leave overnight in the fridge. Top with your favourite toppings or eat as it is.
